Nice picture. Have you had the opportunity to sample some of the local food besides Salmon?

The Caribou is really good. The backstrap is tasty and tender. Becareful of the sausage and other such items made from caribou as often it has pork added to make it more moist, the meat tends to be very low in fat and must have something added to it.

I have had the opportunity to try beaver and porcupine, both treats I declined. Moose and Caribou are the best to eat outside of the local aquatic life.

Moose can often be really gamey depending on the time the moose is killed.

Give some of it a try!
